In my attempt to satisfy my chocolate cravings without gorging on the left over mud cake from MJ's party I whizzed this up to use as a dipping spread/ nut butter to enjoy with some fresh strawberries.
It can also be used to add a chocolate flavour to a smoothie or used as a spread on bread or apple slices.
I didn't want to burn my little blender out by blending for too long, but if you have a high powered blender you could let the mix blend for longer to get an even smoother, more spread-like consistency.
It's a sweet and simple spread handy to keep in the cupboard to satisfy those 3.00pm chocolate cravings!
Almond and coconut chocolate spread
Ingredients
- 110 g (1 cup) almonds, raw
- 50g coconut oil, melted
- 1 tbsp raw cacoa
- 1 tbsp cocoa powder
- 2-3 tbsp rice malt syrup
- 1 tsp vanilla
- 1/2 tsp salt
- Blend almonds in mini-processor. Add remaining ingredients and blend until desired consistency is achieved. Store in the pantry.
Keep smiling
Dani
